Pumpkin Crunch

This is a yummy fall recipe with one of my favorite ingredients: pumpkin!

1 box yellow cake mix
1 can solid packed pumpkin
1 can fat free evaporated milk
3 eggs
1 1/2 c sugar
1 tsp cinnamon
1/2 tsp salt
1/2 c chopped pecans (optional)
1 c butter

Preheat oven to 350ยบ.  Combine pumpkin, evaporated milk, eggs, sugar, cinnamon, and salt in a large bowl.  Pour into a greased 13x9 dish.  Sprinkle dry cake mix over pumpkin mixture.  Top with pecans.  Pour melted butter over the pecans.  Bake for 45-50 minutes.

It's best served warm with vanilla icecream!  Yummy!!
