Crock Pot Chicken Parm

I'll say it again...I love Pinterest. This recipe is another wonderful Pinterest find. And I'm telling you...it's good. Go put it in your crock pot. Right now. It's so easy! Here's what you need.
3-4 boneless, skinless chicken breasts
1/2 c or so of Italian bread crumbs
1/4 c Parmesan cheese
1 egg
1-2 c Mozzarella cheese
1 jar of your favorite pasta sauce

Combine the bread crumbs and the Parmesan cheese. Beat the egg in a separate bowl. Dip each chicken breast into the egg, then roll in the bread crumb mixture. Place each chicken breast into the crock pot. Layer 1-2 c (depending on your liking) of shredded Mozzarella cheese on top. Coat chicken and cheese with the entire jar of pasta sauce. Cook on low for 5-6 hours or high for 3 hours. Serve over pasta. Enjoy!!

Alfredo Lasagna Roll-Ups

I know it has been a LONG time since I posted...I'm so sorry! I've been busy being pregnant, having a baby, and raising my sweet little boy! He is 7 months old now and is such a blessing. In such a short time, I've already forgotten what it was like not to know him.
In the meantime, I have discovered Pinterest. And let me tell you...there are so good recipes on there! I love to look through and pin ideas for meals to try later. (and drool on the keyboard in the meantime!) The other day, I made the recipe that I want to share with you today...Alfredo Lasagna Roll-Ups. Oh my. They are so, so good. So, without further adieu, here's the recipe!!

Alfredo Sauce
1 pint heavy cream
2 tbsp cream cheese
1 tsp garlic powder
1 stick butter
1/2-3/4 c Parmesan cheese
In a saucepan, combine butter, cream, and cream cheese. Simmer until it's melted and well mixed. Add Parmesan and garlic powder. Simmer for 15-20 min on low. You can also use a jar of alfredo sauce if you prefer.
Roll it up (6 roll-ups) 8x8 pan
6 lasagna noodles
2-3 chicken tenderloins
Italian seasoning
Mozzarella, Parmesan, or whatever cheese you'd like
Prep the pan by spraying with a little bit of non-stick spray and pour some alfredo sauce in to just cover the bottom of the pan. Start cooking the chicken with a little bit of Italian seasoning, and it helps to start boiling a pan of water for noodles at the same time. When chicken is done, cut into small (slightly smaller than bite-size) pieces and split into 6 piles. When the water is at a rolling boil, drop in noodles and cook for about 8-10 minutes (or until al dente). Drain and rinse with cold water to prevent them from sticking to each other. (*Very Important!*) Lay out the noodles on some wax paper & blot dry with a paper towel. Spread a little bit of alfredo sauce over each noodle. (Don't put too much or it will make a bigger mess for you to clean up later.) Sprinkle a little bit of Italian seasoning. Take one of your little groups of chicken and try to spread them out evenly over the noodle. Add a little bit of cheese. To roll up, start at one end and roll the noodle over the toppings. They can be hard to handle if they weren't dried. You won't be able to roll them tight and will have to lift the noodle a little over the chicken, otherwise you will end up pushing all the toppings out the other side. Place the roll-up in the pan, seam-side down so they don't come undone. Once they are all in the pan, pour some more alfredo sauce overtop & try to get in between the roll-ups so they won't stick together. Sprinkle a little Italian seasoning if you want, then add cheese on top. Then bake at 350 degrees for about 30 minutes, or until the cheese is completely melted on top.

Homemade Ice Cream!

When I think of summer, one of the first things that comes to mind is homemade ice cream. It's a tradition that I've grown up with and enjoy a lot. Probably too much. But we won't go there. Below are a couple of different recipes that I've tried. Both are delicious!

**Recipes are written for a four quart freezer. Adjust accordingly.

This one is a family favorite and usually our go-to recipe when we're making ice cream:

Homemade Banana Ice Cream

6 bananas, mashed
2 Quarts half and half
2 c sugar
3 tbsp vanilla
3/8 tsp salt
Milk to fill container (not always needed)

What to do:
Mix all ingredients together. Put into ice cream freezer. Follow instructions on your freezer. Serve immediately for soft serve ice cream or freeze for two hours for more firm ice cream.

Homemade Strawberry Ice Cream

2 quarts half and half
2 cans Eagle brand milk
1 small box vanilla instant pudding
2 small packages frozen strawberries, slightly thawed
Milk to fill container (not always needed)

What to do:

Mix all ingredients together. Put into freezer. Freeze according to instructions on your machine. Serve immediately for soft serve or freeze for two hours to firm up.
**This one works will with lots of different mix-ins. You can substitute peaches, candy, etc in places of the strawberries.
